Truffle Deviled Eggs :: And A Giveaway

eggs3-2 We eat a lot of eggs.  I mean…. A. LOT. OF. EGGS!  We enjoy them in pretty much every dish you can imagine.  But, my kids most favorite way to eat eggs….. is hands down….Deviled Eggs.  They’re such a simple snack.  When I make them, I usually double the recipe and keep a big container in the fridge for snacking.  It’s such a good snack that stays with you because it’s packed with protein.  If there are deviled eggs in the fridge, that’s what my whole family will reach for first.

We’ve tried all kinds of fun ways to spice up the traditional deviled egg.  Bacon, pickles, jalepeno, avocado, we’ve even smoked them.  All of those ways are amazing, but this version is currently our favorite.  Because, well….truffles!!  I will eat anything with truffles.  Those magical little mushrooms.  I JUST LOVE ‘EM!  And a little truffle goes a long way.  So garlicky, earthy and amazing.

Don’t save deviled eggs for picnics and Easter.  Make some today!

Truffle Deviled Eggs

What you need:

  • 12 Eggland’s Best hard boiled eggs
  • 1/2 cup mayonnaise
  • 2 tsp yellow mustard
  • 1 tsp hot sauce
  • Truffle Salt & Pepper, to taste
  • Shaved truffles for garnish

What you do:

  1. Hard boil, cool, and peel the eggs.
  2. Cut eggs in half lengthwise.  Remove yolks.  Place yolks in a bowl and mash them with a fork.
  3. Add mayo, mustard, hot sauce, truffle salt and pepper. Continue mixing and stirring until smooth.
  4. Spoon the yolk mixture into a baggie and cut the bottom off.  Pipe the mixture back into the egg whites.
  5. Sprinkle with more truffle salt or shaved truffles for an amazing out-of-this world garnish.
