Well, I’m so sure I haven’t posted in weeks and now I’m doing two in one day! Who does that? 🙂

I wanted to quickly share this simple and easy salad with you.
This salad is so crunchy and refreshing. You will love it!
It’s really more of a method than a recipe, though.
We’ve been eating some variation of this everyday around here.
My cucumbers did shockingly well this year!! The last few years we got vine borers and lost them all, so I am really enjoying the cukes this summer. And so are the kids.
We can’t eat our cherry tomatoes fast enough, either. They are doing so great. I planted a few kinds and so far we like the orange ones best. I really do make this salad every other night.
The kids and Kevin gobble it up.
I think it’s because the kids help pick the veggies. Whatever the reason, I’ll take it.
Cucumber and Tomato Salad
2 or 3 cucumbers sliced.
2 cups of cherry tomatoes sliced in half.
1/4 cup olive oil
3 TBS vinegar
1 tsp sugar
salt and pepper
Whisk the oil, vinegar, sugar, salt and pepper together and pour over the veggies.
Enjoy.
If I use a sweet vinegar like, from Trader Joe’s I skip the sugar. Sometimes I use red wine vinegar and sometimes rice wine vinegar. Also, depending on how big your cucumbers are, you might need more or less of the vinaigrette. And, depending on what kind of cucumbers you have you might need to peel or seed them. Mine are thin skinned like an English cucumber, so I don’t peel or seed. And I also add whatever veggie is ripe that day. Banana peppers, bell peppers, hot peppers, basil, dill, chives….
