What you need:
4 carrots, peeled and sliced coarsely
1 onion, peeled and sliced thinly
water to cover vegetables
1 tsp salt
1 tsp butter
5 medium potatoes, peeled and cut up
3 Tbs. butter
salt and pepper
1 bunch of kale, clean trimmed and sliced
1 lb of smoked sausage
What you do:
Place the carrots, onions and potatoes with salt and 1 tsp of butter in enough water to cover.
Boil until just tender (but don’t let them get too mushy). Sometimes I boil the carrots for 5 minutes before adding the potatoes.
Add the kale to the boiling veggies during the last 10 or so minutes.
Meanwhile, steam and slice the smoked sausage.
Drain the vegetables, reserving 1/3 cup of the boiling liquid.
Return carrots, potatoes, kale and onions to the pot and mash until well incorporated.
I like a few chunks in my stamppot so I don’t try and get it too smooth.
Add a little bit of the reserved liquid if you need too. Add the 3 tablespoons of butter and salt and pepper.
Stir in the sausage.
Eat it up!
This serves 4. With leftovers. 🙂
