dutch comfort food

Stamppot.  Yum.  I love it.  
I’ve mentioned before that my mom’s family is from Holland.  
So, you know I’ve grown up on some good ole’ Dutch food.  
Stamppot is pure comfort food.  
It consists of mashed potatoes mixed with various other ingredients like carrots, onions or kale, even squash.  
It was one of my favorites growing up and it still is.  The kids and Kevin love it, too. 
 It’s usually served as a main dish with sausage.  
It’s just as easy to make a little or lot and it’s GREAT at leftovers, too.  
Stamppot is traditionally served in the fall and winter.  
It’s healthy, hearty and delicious and a great way to get your greens.  🙂  
There are a lot of different ways to make it.  I used carrots and kale since I had both of them in the house.  It was so good.  
I think usually it only has kale OR carrots, but I like both.  🙂  
Today is going to be stormy and cold.  A great stamppot day!  



Dutch Stamppot



What you need:
4 carrots, peeled and sliced coarsely
1 onion, peeled and sliced thinly
water to cover vegetables
1 tsp salt
1 tsp butter
5 medium potatoes, peeled and cut up
3 Tbs.  butter
salt and pepper
1 bunch of kale, clean trimmed and sliced
1 lb of smoked sausage

What you do: 
Place the carrots, onions and potatoes with salt and 1 tsp of butter in enough water to cover.
Boil until just tender (but don’t let them get too mushy).  Sometimes I boil the carrots for 5 minutes before adding the potatoes.
Add the kale to the boiling veggies during the last 10 or so minutes.
Meanwhile, steam and slice the smoked sausage.
Drain the vegetables, reserving 1/3 cup of the boiling liquid.
Return carrots, potatoes, kale and onions to the pot and mash until well incorporated.
I like a few chunks in my stamppot so I don’t try and get it too smooth.
Add a little bit of the reserved liquid if you need too.  Add the 3 tablespoons of butter and salt and pepper.
Stir in the sausage.
Eat it up!
This serves 4.  With leftovers.  🙂
