Banana Split Yogurt Parfaits

June 22, 2018 by Erin Leave a Comment

This is a really fun breakfast for those lazy, summer days.  In fact, these Banana Split Yogurt Parfaits would make a great after-school or after-pool snack, too.

This post is a collaboration with Produce for Kids and Meijer. All opinions are my own.

We’ve been super busy this summer.  We’re always running out of the house to fun activities and classes at the parks and libraries and day trips here and there.  And every year around this time, I think to myself….”Man, summer is really flying by. We should really do less stuff and stay home.”  And so for about a week or two, we do!  And this breakfast is perfect for those days.  Leisurely days at home.

I surprised the kids with this fun breakfast just this week.  They were so excited and thrilled.  No cold cereal or toast on the run today, kids!  It’s a DIY Banana Split Yogurt Parfait Day!

Making your own parfait is serious business!  You have to get just the right ration of fruit, yogurt, chocolate and caramel.  🙂

So happy about breakfast today.

Cheers.

What you need:

  • 1 cup lowfat Greek vanilla yogurt
  • 1/4 cup caramel dip
  • 1 banana, sliced
  • 6 Well-Pict Berries® strawberries, sliced
  • 1/4 cup Grower Direct® cherries, sliced
  • 1/4 cup blackberries
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • 2 tablespoons Wonderful® pistachios, chopped
  • 1 tablespoon chocolate chips
  • 1 tablespoon white chocolate chips

What you do:

  1. Spoon ¼ yogurt into two glasses, drizzle with 1 Tbsp. caramel dip. Add bananas, strawberries, berries and cherries. Repeat layers.
  2. Top with pistachios and chocolate chips.  ENJOY!

And don’t think all of your washing, slicing and chopping will go to waste.  Any of the fruit and yogurt that was left on the platters, I put in a baggie, threw in the freezer and it’s going to be an amazing breakfast smoothie tomorrow!  #win!

Produce for Kids has so many simple, delicious, healthy recipes, like this one.  We really love all the ones we’ve tried.  They are very creative.  And they way the give back to the community is just awesome.

Produce for Kids is joining forces with Meijer and Jump with Jill  again this summer to help raise money to bring the Jump with Jill nutrition education program to local schools!

What is Jump with Jill?!  It’s a rock and roll nutrition show (the only one of its kind) and it’s all about engaging kids on the subject of health and empowering them to eat better and make good choices.  They use fun catchy songs, upbeat dances and super cute fashion choices and the kids just love her.  Seriously.  So do I.  She’s quirky and fun.  Check her out.

Have you tried Shipt yet?  Meijer shoppers can access a FREE 2-week trial and a $15 credit towards your first order by visiting shipt.com. No promo code is required.

Produce for Kids is such a great organization that’s truly dedicated to creating a healthier generation and giving back.  Seriously gotta love that!  It’s always a pleasure to work with them.  Check them out on Twitter and Instagram for more recipe ideas and all kinds of healthy eating info!

Disclosure:  Thank you to Produce for Kids for sponsoring this post.  All opinions are 100 percent my own.
