cilantro hummus

March 17, 2011 by Erin 3 Comments

I know that cilantro is one of those things that people either love or hate. I happen to be one of the lovers! I seriously can’t get enough of it. It’s even been known to find it’s way to my pizza.

Trader Joe’s has this AMAZING cilantro jalapeno hummus. I could eat the whole tub in one day. It is so good. But, sadly they are consistently out of it when I make the trip. I guess everyone loves it.
I decided it was time to make my own. I didn’t have any jalapenos in the house this morning when I made this decision. But, since I had everything else, I chose to forgo the peppers and use a dash of cayenne instead.

I love it. It’s really tasty. Which is a good thing since Trader Joe’s discontinues things without warning, I needed to have an back-up.

Plus, its pretty and green and today is
St. Patrick’s Day!

What you need:

one bunch of cilantro (as much or as little as you want…I used most of it)
one (15 oz) can of chick peas – drained and rinsed
2 cloves of garlic
1/4 cup of tahini
zest and juice of one lemon (or lime)
salt and pepper to taste
cayenne pepper or a jalapeno

What you do:

Put all above ingredients into a blender or food processor and blend until it looks like hummus. Depending on the consistency, you can add a little bit of water or olive oil to get things moving.
Easy Peasy.

Happy St. Patrick’s Day!

I was JUST having this conversation with my friend about dips and things needing food processors. I assumed I could just kinda mash it all up left to my own devices- but I suppose I should ask how necessary one is before I even try that…
