So, the waffle taco has been all the buzz around the world wide web lately. Taco Bell is breaking into breakfast (see what I did there?) and there are pictures of this new waffle taco all over the place. We don’t go to Taco Bell very often. I mean, since college, anyway. There are occasions when we have been known to run through for a bean burrito or a cheese roll up. And, I’m pretty sure that I will ever make it through for a breakfast waffle taco.
Although I do follow @tacobell on twitter and they might be my favorite twitter account EVER. Seriously. Whoever is in charge of the @tacobell twitter account is a dang genius. No lie. Check out the article about them. Just hilarious. Back to the waffle tacos……
The pictures of the waffle taco seem to disgust some people, I actually think the concept is interesting. I really like the flavors of savory and salty and sweet together. (like these maple bacon chocolate chip cookies)
So, I decided we were going to make our own.
With our own ingredients so I know just what’s in them.
YES! They turned out so well and were devoured by the whole family. And the best part….they were simple to make and the kids thought it was an awesome and fun breakfast. Win!
Tacos for breakfast! Here we go.
Bacon (or sausage) and Egg Waffle Tacos
What you need:
- waffles (your favorite frozen brand or favorite homemade recipe, here’s our favorite whole wheat waffle recipe)
- sausage or bacon (I made both)
- eggs
- maple syrup
- sharp white cheddar cheese (optional)
To make these more healthy (but mainly to make myself feel better about eating two), I used 100 percent whole wheat waffles, local free range eggs, 100 percent pure maple syrup, and nitrate free sausage and bacon from a local farmer. 🙂 So, hopefully these are a little healthier than Taco Bells version! 😉 Eat up!
What you do:
- If you are using frozen waffles, thaw them out first, so they are pliable.
- Preheat oven to 350.
- Here is the secret for perfect waffle tacos!! You need a muffin tin! Turn your muffin tin upside down and fit the waffles in the grooves so that they are the shape of a taco.
- Bake at 350 for about 5-7 minutes or until they are warmed, but not crispy. (If you leave them in too long they get crunchy, and will fall apart while you’re eating it. Believe me! You’re going for warm, but still pliable.)
- Cook your breakfast meat of choice. I flattened out my sausage patties into thin ovals so that they would fit the shape of the waffle better.
- Cook your eggs. We like fried eggs, but scrambled would be great too.
- Assemble your taco.
- I added cheese to mine and it was fantastic. Like a sharp cheesy glue that held all the insides together.
- Drizzle maple syrup on the inside right before serving.
- Enjoy!
“The Elvis” Waffle Taco {Banana, Peanut Butter, Chocolate, Maple Syrup AND BACON}
(kind of like these amazing Elvis Pudding Pops with candied bacon!)
What you need:
- waffles (your favorite frozen brand or your favorite homemade recipe, here’s our favorite)
- peanut butter
- chocolate spread (We like Trader Joe’s version a lot!)
- bacon
- banana
- maple syrup
What you do:
- Follow the same steps above for heating your waffle taco shells in a muffin tin. {Don’t leave them in too long!}
- Spread one half of the waffle with peanut butter
- Spread the other half with chocolate spread
- Add a slice of a halved banana.
- AND BACON
- Drizzle with maple syrup.
- Eat it up!
The sausage with sharp cheddar cheese and egg was my favorite. My husband like the bacon and egg one best with no cheese. And my kids LOVED the Elvis one so much! They asked for them again the next morning. haha.
I need to get a new waffle iron because mine recently bit the dust. I like the ones that make circle waffles so that I can make silly stuff like these watermelons. I am leaning towards this one as my next waffle iron.
