birthday cake pancakes

I’ve seen this recipe on Pinterest a lot lately.  What a clever idea for a special birthday breakfast surprise!  I usually do make pancakes on the kid’s birthdays.  And I usually make it special by letting them chose a color and then we all have purple pancakes (the bird’s choice last year).   But this seemed even more special.  Pancakes that tasted like birthday cake!!!  Yes, please.  WITH SPRINKLES!  There are a bunch of different recipes, here’s how I made them. 
Birthday Cake Pancakes
1 cup Bisquick (I used organic pancake mix to make myself feel better!  😉
1 cup yellow cake mix
1 cup milk (I used almond)
2 eggs (thanks, ladies!!)
1 teaspoon vanilla extract
3 Tablespoons of sprinkles
Mix together and there you go.  
Glaze
(which is way more fun than syrup)
1 cup of powdered sugar
1/2 Tablespoon of milk
dash of vanilla extract
extra sprinkles for the top
Whisk together and pour over a stack of cakes.

The bean is THREE!  
How did that even happen?!?!  
So, we had a super, fun cabin party (which I will post about soon) last weekend.  
But today was his actual birthday…..(tear).  🙁  
I made these little babies for dinner!  I do love breakfast for dinner.  He did too!
