blts with fried green tomatoes

I made these for dinner last night! Amazing. BLTs with fried green tomatoes. I guess you could call them BLFGTs. SO GOOD!



First you have to make the bacon, so that you can fry the tomatoes in the bacon grease. (this is not a “low fat” meal – but on the bright side it does have bacon in it!)
FRIED GREEN TOMATOES

Ingredients:

2 green tomatoes (sliced 1/4 inch thick)

salt and pepper to taste

1/2 cup of flour

1/2 cup corn meal (I added a little Tony’s to this for good measure)

2 egg (lightly beaten)

1/4 cup milk

oil or bacon grease for frying

Directions:

Season the tomato slices with salt and pepper. Whisk milk and egg together.

Dredge the tomatoes slices in the flour,




then dip them in the egg milk mixture




and finally dredge them in the corn meal.





Fry the tomato slices in oil or bacon grease until golden brown on both sides, about 1-2 minute per side.




Assemble the most delicious BL-fg-T sandwich ever.


Eat it!


Kevin’s has miracle whip (gross) and I use real mayo with olive oil on mine and the kids (yum).


I quite enjoyed going outside with the kids and collecting eggs and tomatoes to use for this meal. It’s fun to be connected the food we eat. I felt like a farmer. 🙂
