We had over a dozen fresh eggs given to us from various people over the last week. My mom’s neighbor has chickens, so I got some from him. Plus, we got three today from our visit to Maria. And I had a few from a visit to a farm earlier in the week. So, for dinner I made a fritatta with our some of our bounty. Delicious. Kevin’s not a huge fan of egg dishes, but the kids and I ate it up. The yolks in a fresh, free-range egg are SO orange. You have no idea. Many, many shades darker than even the organic eggs from the store. Strange. I just used veggies we had in the fridge. So, it was a mushroom, spinach, onion fritatta with gooey melted cheese on top. What’s not to love about that? I also decided that since it was all rainy and gross outside that we needed a warm loaf of fresh bread to go with it (slathered in butter of course). A lovely dinner. (OK, I totally cheated and used the bread machine – but it was still warm and fresh) 🙂 How I make a fritatta….. Saute veggies in oven proof pan. Beat eggs with a bit of milk and pour mixture over veggies. Stir around a little bit until slightly set. Put whole thing in the oven until eggs are cooked to your liking. Sprinkle with cheese and broil until melty. There’s probably a much more professional way to do this – but my way works too.
