cucumber hummus cups

I made these as a snack for a party recently. They were so easy and really, really good. They were gobbled up – and they look really cool too.

You need a cucumber. If you use the English variety that are wrapped in plastic – you don’t need to peel it. I only had a regular one – so I peeled it. I peeled it all the way because the wax freaks me out – but you could peel stripes in it if you wanted to. That always looks nice.

Then chop the cucumber into nice thick slices. A few inches.

Next take a sharp little spoon (i used a teaspoon measuring spoon) and scoop out some of the inside so each one is like a bowl. I thought, at first, that this would be kind of a long and annoying job – but it really only took a couple minutes to do this to two cucumbers.


Next fill up each cup with hummus. Easy, impressive, crunchy, healthy, refreshing….YUM.

    You guys should totally make them. A nice light appetizer before the turkey! They are so good and so easy. Kevin doesn’t even love hummus and he was eating these by the handful. I thought they would be a pain to make at first – but they were really simple.
