I have been trying to up the protein we eat as a family for a while now. We are all in with it, but it gets difficult when we have a hankering for sweet snacks, treats, or desserts. This recipe for High Protein Banana Bark hits the spot! It is perfectly sweet and creamy and peanut buttery. Plus the protein is through the roof keeping us all satiated and happy. I used my favorite grass-fed Naked Whey to up the protein and nutrition even more.
High Protein Banana Bark
What you need:
There are no amounts listed, as all this is to your taste. This is more of a method rather than a recipe. Change up the flavors. I think Strawberry Banana Bark would also be amazing and I will be trying that one next.
- cottage cheese
- bananas
- peanut butter (or nut butter of your choice)
- chocolate chips (I used sugar free chips)
- coconut oil (since this gets frozen, you could skip this)
- Chocolate Peanut Butter Protein powder
- Flaky sea salt
High Protein Banana Bark
What you do:
- Slice your bananas and place on a rimmed baking sheet lined with parchment paper.
- Blend Cottage Cheese with the Protein Powder.
- Spread that mixture over the sliced bananas.
- Melt the peanut butter in the microwave at 20 second intervals until pourable.
- Melt the chocolate chips and a spoonful of coconut oil in the microwave at 20 second intervals until pourable. (the coconut oil helps the chocolate harden, but could be omitted since it all gets frozen anyway. We like the way it tastes)
- Drizzle the chocolate and peanut butter over the tray and top with flaky sea salt.
