Fancy and Simple Mint Chocolate Chip Cake

I just love how this cake turned out.  It’s so pretty and so tasty!!  And it was super simple to do.  The combination of mint and chocolate is one of my favorites.  It’s my jam.  Going to any holiday parties?  Take this.  It will be a favorite!!  I promise.

If you’ve followed here for any amount of time, you know that I absolutely HATE baking.  Just can’t stand it at all.  Nothing I ever try turns out like it’s supposed to.  Even those slice and bake rolls of cookie dough from the grocery store turn out badly in my kitchen.  I’m a mess.

So, I always just turn to to the Kroger bakery when I need a sweet baked item.  They do it up RIGHT!  I bought this lovely, decadent chocolate cake from my local Kroger and had them ice it with mint chocolate chip Whipped Icing.  It was just so pretty.  All lovely and fluffy and such a creamy light mint color.  But I had other plans for this baby.  Let’s take it to the next level of chocolate and mint.

I bought a package of Mint Oreos and a package of Andes Mints.  And we had a blast.  My daughter used the vegetable peeler to make chocolate curls from the Andes Mints.  They were adorable.

I used a serrated knife to cut the Oreos in half.  No matter how careful I was, I could only get one good half from each cookie.  My family was not at all sad about this, as they devoured the broken pieces as quickly as I made them.

Then we took our half cookies and chocolate curls and decorated our pretty little cake.  Isn’t it cool?  We love the way it turned out.  She’s fancy!  🙂

It was delicious.  Oh so tasty.  And the chocolate cake with mint whipped icing in the layers ….mmmmm…..perfect and dare I say……moist?  (I know people hate that word.  But, it does come in handy to describe a cake!  haha.)

Ask for Whipped

Have you ever had the whipped icing available in your grocery store bakery? We like it so much better than regular, butterfat icing.  It’s just so light and fluffy.  It’s a perfectly, balanced sweetness with a creamy texture.  It’s so smooth and it’s just sweet enough.  It compliments the cake so well.  Plus, it has less sugar and fewer calories than butterfat icing and no trans fats.

We’ve had several of the flavors.  They offer so many!  I liked the seasonal Cream Cheese Whipped Icing a lot.  But I LOVED the Mint Chip!  OH MY!  It was delicious.  They offer all kinds of other fun flavors, too.  Cookies ‘n Cream, Salted Caramel, S’mores, Strawberry and even Lemon.  Plus, they often have limited-edition seasonal flavors too!  Mmmmm. You can customize your cake or cupcakes any way you like.  I really want to try the lemon next.  I am obsessed with anything lemon.
