Oh…. the lunch box packing. It gets so boring. For me. And the kids! And I only have to pack lunch for the kids two times a week!! I always want to pack healthy stuff. But it has to be easy. And, I also want to make sure they actually eat it. The thought of them trading my stuff for junk or throwing it all away just makes me cringe. So, I try to mix it up. I keep it interesting with fun new, recipes and always have them help pack and choose what goes inside. They love helping. And then they eat it!
The new recipe that they’ve been digging lately is this Creamy Guacamole Chicken Salad. It’s packed full of all the good stuff. Its creamy, crunchy and satisfying. They love it!
What you need:
- 2 cups of chopped chicken (I use leftover rotisserie)
- 1/2 cup of guacamole (I use Wholly Guacamole)
- 1/2 cup of quartered grapes (I used Sun World – they are so crisp and good!)
- 1/2 cup of chopped celery. (Adds the crunch!)
- 1/2 cup of halved cherry tomatoes (I used NatureFresh)
- 1/4 cup Litehouse ranch. (This adds a great surprise flavor)
What you do:
- Mix it all together.
- Done!
- The kids eat it on whole grain bread, and I like it as is or over a bed of greens. Hearty, healthy, good!
Throw in some carrots, a delicious Zespri yellow kiwi (their absolute favorite), and some Crispy Fruit….you’ve got their lunch and after school snack taken care of. Done and done.
I like packing a big lunch and then they can choose what to eat at lunch and what to save for snack.
They also like to pack lunches like these. Just a lot of things to dip and some crunchy fruit or raisins (both of which are like candy to them. So good!) hahah. They love dipping.
