We love avocados in this family! I mean LOVE. They are a staple on my grocery list. They were even the bird and the bean’s very first food. Forget those creepy baby cereal flakes – we went straight for the guac! haha. With good reason – These magical little fruits (yep – fruit) have the vitamins and nutrients essential for child development and growth. They are full of potassium, fiber, folate, vitamin C, E and B-complex vitamins that support memory and brain function. And don’t be afraid of the fat. Most of the fat in avocados are the good monounsaturated kind that actually lowers cholesterol. I just love it when something so good for me is also so delicious!
We eat them all kinds of crazy ways around here….on toast with cheese, with our eggs, as a spread on sandwiches, in wraps for lunch, on salads, in soup, on pizza, plain with salt and tomatoes, of course as guacamole.
But just this week I decided at the last minute to add one to my grilled cheese sandwich. Yes. It was divine. I may not ever eat a grilled cheese sandwich with out an avocado again! It was so good. The avocado was perfectly creamy and smooth and the warm gooey cheese with the crisp butter bread. Oh I wish I had one right now. They were devoured. The kids both asked for seconds, but sadly there it was the last avocado in the house. (Must remedy that.)
Avocado Grilled Cheese.
You need – – – – cheese (any will do – I used mozzarella and it was amazing), buttered bread, avocado. I added cheese to the insides of both slices of bread to hold the slices of avocado in. Mmm. Cheese glue. Add anything else you want. I would have added tomato and cilantro if I had had it . That combo sounds so good to me. Pepperoni also comes to mind. Just try it. You won’t be sorry.

I have just recently discovered your site and I LOVE IT! I saw your post on avocados and I wanted to let you know that the Husbinator and I love avocados as well and when we do a grilled cheese, we put sundried tomatoes on ours and it is pure heaven! Also, I have made avocado buttercream frosting for a coconut lime birthday cake and it was spectacular. Thanks for having such an awesome website!
