Chicken Parmesan Skewers with Balsamic Mozzarella Fondue

 I love chicken parmesan!  Really, I mean, what’s not to love?  Crunchy parmesan-breaded chicken, melty mozzarella cheese, tangy marinara sauce all on a pile of pasta!  Um, yeah!

I’ve mentioned before that I was chosen as one of the new Chick-fil-a Houston Road Ambassadors.  And as part of that,  I was asked to develop a recipe using some of the items from their catering menu.

The Chick-fil-A catering menu is great and makes planning any party easier.  Simplify party planning???  Yes, please!  The fruit is fresh the cookies are amazing and I just love those crunchy, little chicken nuggets made from actual fresh, real chicken.

So, I decided we would re-create Chicken Parmesan …… on a stick!

I’m not sure why, but, I’m completely fascinated by food on a stick.  It’s just so fun!  I even have a WHOLE Pinterest board dedicated to food on sticks!  Check it out and follow along if you want.   Let me know if you have a food on a stick and I’ll pin it!  🙂

So, we made it into a whole Fondue Night Party!  {You know I love a theme!}

Onto the Chicken Parmesan Skewers and Fondue Night.  

What you need:

  • Chicken (Crunchy Breaded Nuggets from Chick-fil-A are perfect!)
  • Cherry Tomatoes
  • Fresh Mozzarella Balls
  • Cheese filled Tortellini
  • Marinara Sauce  (use your favorite jarred or homemade sauce)
  • Balsamic Mozzarella Fondue (recipe below)
  • skewers and fondue pots

 Dip my cheese into more cheese?????  Well, OK, if you insist!!  🙂

Balsamic Mozzarella Fondue
Recipe Type: dinner
Cuisine: fondue
This triple cheesy delight is amazing! We paired this fondue with chicken parmesan skewers, but it would be great with veggies or bread too! Or with a spoon. mmmm cheese.
Ingredients
  • 12 oz mozzarella cheese, grated
  • 2 oz grated Parmesan cheese
  • 1 oz grated Swiss cheese
  • 1 tbsp flour
  • 1 clove minced garlic
  • 1 cup dry white wine or chicken stock
  • 1 tbsp balsamic vinegar
  • 1 tsp basil
  • 1 tsp oregano
Instructions
  1. Combine the grated cheeses and flour in a large bowl.
  2. Mix to coat the shredded cheese with flour and set aside.
  3. In a saucepan, combine the garlic and wine or chicken broth and bring to a simmer over medium.
  4. Reduce the heat to medium-low.
  5. Add the cheese and flour mixture, a bit at a time, to the saucepan. Stir constantly after each addition.
  6. Stir gently until all the cheese is melted.
  7. Stir in the balsamic vinegar, basil and oregano. Cook and stir for about 2 minutes.
  8. Transfer to a fondue pot.
  9. Serve immediately.
  10. Enjoy.

    Never knew Chic a fil had a catering menu-of course I don’t think there are any near me at least that I’ve heard of or seen. Those chicken ka-bobs look like a great party pleaser and of course you know I am drooling from the chocolate fondue!

    Skewers make for such a nice lunch!! My daughter got to try a fondue chocolate fountain last summer, and I think that was her favorite thing to do…and she did lots of stuff, lol. so not joking. 🙂

I’d heard of many items to make to Fondue… but this is the first I’ve heard of Balsamic Mozzarella Fondue. I’m sure this coupled with my favorite meal which is Chicken Parmesan would be fantastic.     Interesting idea. The last time I had any fondue was when I was a kid in the late 60’s or early 70’s. The only thing I remember (that was a long time ago after all…..) was that I didn’t like it and I didn’t like the people that we went to for dinner. Anyway, I have found out that I really like some of the things now that I really disliked when I was a kid. The nearest Chick-fil-A to us is probably 500 miles or more, so I can’t try this exact recipe, but thanks for the idea.
