This sausage tortellini soup is filling and delicious. My husband (who doesn’t think soup is a meal) loved it and had seconds…. and thirds. The kids gobbled it up. It’s just a perfect hearty soup with sausage as the star! What’s not to love about a soup with sausage, cheese and noodles…oh yeah, and spinach! 🙂 (And how can a soup with all that NOT be considered a meal?! )
The weather is getting chilly and crisp. I LOVE soup making weather! This one’s a keeper.
- 1 package of sausage (browned and crumbled)
- 1 package of kilbasa
- 4 Tbsp. olive oil
- 5 cloves minced garlic
- 1/2 cup white wine (optional)
- 4 cups of chicken broth
- 10 ounces of cheese tortellini
- 1 can diced tomatoes
- 6 ounces baby spinach leaves
- 1 Tbsp butter
- salt and pepper to taste
- parmesan cheese for garnish
- Heat 2 tablespoons of oil in a large pot or Dutch oven. Brown the sausage and remove from pan.
- Slice the kilbasa on a bias and saute’ in the same pan. Remove and set aside.
- Heat remaining oil in the same pot.
- Gently saute’ garlic for one to two minutes.
- Stir in wine and broth. Bring to a boil.
- Cook for about 5 minutes. Return both sausages to the soup.
- Stir in the spinach and can of tomatoes.
- Add the tortellini. Cook for an additional 5 minutes.
- Add the spinach and cook until it wilts, about 2 minutes.
- Melt butter into soup.
- Top with parmesan cheese.
- Refrigerate any leftovers.
Delicious soup except that I found it way to greasy with olive oil, two kinds of fatty sausage and then butter. Don’t get me wrong, I love fat and butter, but this was too much for me.
I browned the sausage and kielbasa without any oil in a nonstick pan and used only a touch of butter at the end.
My son and I love this soup but not that level of fattiness. Thanks for sharing it with everyone!
