We love simple meals around here. Even though I really do love to cook, I don’t have time to make elaborate dinners very often, so the simpler the better is what I stick with. And we always have an abundance of healthy ground beef in the freezer and I like to come up with creative ways to use it.
Some of our favorites are ground beef gyros, baked crispy burritos and Mexican lasagna. And these Asian Sloppy Joes are on that list, too. They are so easy and so tasty. I love the Asian flavor so much that I wanted to call them Sloppy Chos. Get it.
- 2 olive oil
- 1 onion, finely chopped
- 1 stalk celery, finely chopped
- 2 carrots, shredded
- 2 tablespoons garlic, minced
- 1 tablespoon fresh ginger, minced
- salt and pepper to taste
- 1 pound of ground beef
- 1 15-ounce can tomato sauce
- 1/4 cup soy sauce
- 1/4 cup light brown sugar
- 2 tablespoons tomato paste
- 2 tablespoons cider vinegar
- 1 teaspoon hot sauce (optional)
- 1 cup canned diced tomatoes, drained
- 1/8 cup fresh lime juice
- dinner rolls or buns, split and toasted
- Shredded cabbage and cilantro, for serving (optional)
- In a large skillet, heat oil on medium heat.
- Add onions, celery, garlic, ginger and carrots and a pinch of salt and pepper.
- Cook on medium heat until veggies are softened. Stirring occasionally for about 10 minutes.
- Add ground beef (or chicken, if you prefer) stirring occasionally until it’s browned.
- Stir in tomato sauce, soy sauce, brown sugar, tomato paste, vinegar, hot sauce, tomatoes and lime juice. Simmer and stir until thickened, about 15 minutes.
- Season with salt and pepper to taste.
- Add the filling to buns or rolls.
- (If I would have had cilantro or cabbage, those would have been added to the sandwich for crunch and freshness. Next time. )
- Serve and Enjoy.
