These are good. Reaaaaally good!! My five and three year old even gobbled them up.
And I love anything with balsamic vinegar. And anything with cilantro. Oh yeah…..and anything with goat cheese! So, seems natural that I would love these. I do like the taste of beets, all earthy and sweet. But, even if you don’t, you should give these a try, anyway! Beets are so good for you! Filled with all kinds of vitamins, minerals and cancer fighting goodness.
Buy beets that feel firm and heavy for their size. (I always buy mine with the greens still on, because I can juice them or add those to green smoothies.) Rinse and scrub your beets. You can peel them, but I don’t. I bought yellow and red beets for this dish.
Roasted Balsamic Beets with Cilantro and Goat Cheese
What you need:
- washed beets
- olive oil
- salt and pepper
- balsamic vinegar
- cilantro
- goat cheese
What you do:
Preheat oven to 400 degrees. Slice the beets (they roast faster than whole beets) and arrange in one layer on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper. Roast for about 30 minutes, or until tender. Take out and drizzle a bit of balsamic vinegar on them in the last 10 minutes. Transfer to a serving dish and sprinkle freshly chopped cilantro and goat cheese on top. EAT! ENJOY!
