I’m going to call these…..’The last cookie I will ever eat.’
They are THAT good.
I’m not kidding.
And I’m not even much of a ‘sweets’ person. I usually prefer salty – until now.
My sister made me a batch as part of my Christmas present. Unbelievable.
I tried to hide them from Kevin and the kids.
(I knew they wouldn’t appreciate them, with their silly undistinguished palates) 😉
But, Kevin still found them. And he and the bean finished them off.
I almost cried.
I felt stupid for being so sad about it.
So, then I was left feeling stupid AND sad.
OK – back to the cookies.
Words can not describe, but I’ll try.
They are thick and chewy.
They are dense but not heavy.
They are melty chocolate chips surrounded by the perfect dark chocolate cookie.
They’re supposed to be a knock-off of some famous giant cookies at Levian Bakery in Manhattan.
I’ve not been there or enjoyed their cookies, but that might be a good thing.
My sister didn’t make them ‘giant’ as the recipe calls for. She made them regular sized. Which obviously means that means it’s OK to eat two….or three….or….
She brought me 8 more this morning.
(There are still 6 left – I’m so proud. I even shared one with the kids. I’m growing as a person.)
I watched her middle-est child today while she was at work.
And she brought me cookies.
Yes, the cookies are now currency.
Delicious chocolatey currency.

Giant Double Chocolate Cookies
Yield: 12 very large cookies
Ingredients:
1 cup (2 sticks) cold, unsalted butter, cubed
1¼ cup sugar
2 large eggs
½ cup dark cocoa powder
2¼ cups all-purpose flour
¼ tsp. coarse salt
1 tsp. baking powder
2½ cups semi-sweet chocolate chips

Directions:
Preheat the oven to 350˚ F. Line baking sheets with parchment paper or silicone baking mats. In the bowl of an electric mixer, combine the butter and sugar. Beat together on medium-high speed until light and fluffy, 2-3 minutes. Blend in the eggs one at a time, scraping down the bowl as needed. Mix in the cocoa powder until well blended. Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated. Fold in the chocolate chips with a spatula. Transfer the dough to a work surface and knead briefly by hand to be sure the ingredients are well combined.

Divide the dough into 4 ounce portions (or divide into 12 equal pieces). Roll each portion of dough into a ball and flatten just slightly into a disc. Place on the prepared baking sheets, a few inches apart. Bake 16-20 minutes. Let cool on the baking sheets 5-10 minutes, then transfer to a wire rack to cool completely.

I had mine with a nice, cold, creamy glass of coconut milk. (Which my husband refused to drink because he says it tastes like suntan lotion. mmmm. Delicious suntan lotion. Good, more for me. ) Obviously any milk you prefer would be amazing. But, seriously what goes better with coconut than chocolate?
She makes extra dough and keeps it in the freezer so she can whip these babies out anytime! She’s pretty much a genius.
Get a load of that melty chocolate chip glistening in the sun.
