My aunt, uncle and cousin took the “big” kids to a festival after church today….. And there was a Packer game on….. And my brother-in-law was hunting. Soooo…..it seemed like the perfect time for my sister to teach me how to make Cydney’s homemade tortillas. We had no three year olds, no husbands, and only two little munchkins to watch – it was SOOO easy. ๐
The little boys played nicely together while we cooked….scooting cars all around the house.
Then they came scavenging when a few tortillas were done.
and they shared.
My sister has been talking about how great these things are from the moment she knew they existed. And I totally agree. They are so ridiculously fantastic and simple. Thanks Hez. And Cydney. ๐
So, there is a little tortilla disclaimer…..Cydney lived in Belize where a nice old woman taught her how to make these. She taught her all the measurements by using her hand has a measuring cup. So, it’s not really a precise recipe. Which I LOVE….because baking and I really don’t get along so well….because of the whole precise measuring thing. So, I love this recipe……You kind of just mix stuff together and roll it into balls. Like this….
Awesomely Easy Tortilla / Flat bread Things.
2 1/2 cups flour
1 tsp salt
2 tsp baking powder
1/3 cup oil
approx 1- 1 1/2 cup hot water
mix dry ingredients. make well in center and add oil. gradually add water, while mixing with hands. if dough gets too sticky, add flour until it seems better. knead for 4-5 minutes. you will want your dough to be very smooth and pliable.
pinch off dough into 8-12 balls (depending on how big you want your tortillas). lightly cover each ball with a little bit of oil, (i did not do this part) put them all in a bowl together, cover and let sit for 10 minutes, while your griddle is heating.
you can use a skillet or griddle, heat to medium-high. must be thoroughly heated before you start or your first few tortillas wont cook right. roll 1 tortilla out at a time, with a rolling pin. (hum… I used an alternative) place tortilla on griddle, cook for approx 30-60 seconds on each side, or until lightly browned. stack them together as they come off the griddle, and wrap in a dishcloth to keep them warm and moist. i find that i have just enough time to roll out one tortilla as the other one is cooking.
I couldn’t find my rolling pin ANYWHERE. So, we improvised. It was MUCH easier to find an empty wine bottle than a rolling pin. Don’t judge. ๐

They’re so good. I’ve eaten way to many today. They’d be great for tacos, falafels (which I plan on using them for tomorrow) gyros, peanut butter & jam pinwheels. Anything. You could even cut them up and bake them to make chips. I love that I know what’s in them.
