Mmm. Bean sprouts. They’re so easy to make….. and so delicious eat…… and so good for you. Win, win, win. Plus, both of the kids and Kevin love them. You can put them on salads, in sandwiches, or just eat ’em as a snack. Plus you can grow them in a mason jar on your counter. Awesome! We love sprouts. We have tried many, but mung and alphalfa are our favorites.
So….why sprouts…..
When a seed starts to sprout a lot of complex biochemical reactions take place. Sugar is converted to Vitamin C and the levels of protein, amino acids and B-vitamins increase. The new sprout also begins to synthesize a variety of plant enzymes, which is the most beneficial part of the sprouting process for us.
Sprouts are the most enzyme rich food on the planet! Sprouts have between 10 and 100 times more enzymes than fruits and vegetables! Enzymes are essential to help our body live, thrive, and do what it’s naturally supposed to do. Without proper enzymes, our body ages faster than it should. Gross – don’t want that.
And unless we’re eating a mainly raw diet, most of the enzymes in our food are destroyed by cooking. So, then our body produces extra digestive enzymes to help us break down and digest the enzyme deficient food. This leads to stress on the digestive system and long-term digestive problems. And as we age we are more likely to become more and more enzyme deficient since our body has been pulling enzymes from all other systems to help break down our food for so many years.
So eat your sprouts! It’s one of the easiest and yummiest changes you can make for your health. Plus the kids get a kick out of eating tiny plants that they watched grow on the counter for three days! The bird helps me rinse them every morning. 🙂
Of course… my hippie mom fed me sprouts when I was a kid….I’ve seen pictures of me eating them as a snack in my high chair. Then one day my grandma gave me a chocolate chip cookie…my first…and I was ruined. 🙂 Thanks Mom (and Grandma). hehe
